Eccles Cakes

Ingredients
- 150g currants
- 1 orange
- 50g glace cherries
- 125g sugar
- 60g butter
- 5 sheets puff pastry
Method

Add sugar, 2 tsp orange and 2tsp lemon zest to a bowl
Optional: let this sit for a few hours, the sugar will draw more flavour from the zest.

Add currants, cherries, and melted butter
Mix.
- Cut the puff pastry sheets into four squares

Fill the pastry
Line the edge of each square with water, fill with 1 tbsp of fruit mix, and seal the damp edges.
- Gently round, flatten and score each parcel
- Brush with water and dust liberally with sugar
- Cook at 220c for 20 minutes
