Eccles cakes
Makes 12

Ingredients

  • 150g currants
  • 1 orange
  • 50g glace cherries
  • 125g sugar
  • 60g butter
  • 5 sheets puff pastry

Method

  1. Add sugar, 2 tsp orange and 2tsp lemon zest to a bowl

    Optional: let this sit for a few hours, the sugar will draw more flavour from the zest.

  2. Add currants, cherries, and melted butter

    Mix.

  3. Cut the puff pastry sheets into four squares
  4. Fill the pastry

    Line the edge of each square with water, fill with 1 tbsp of fruit mix, and seal the damp edges.

  5. Gently round, flatten and score each parcel
  6. Brush with water and dust liberally with sugar
  7. Cook at 220c for 20 minutes
