Cheese and Leek Dip

Smoked brisket
Makes 750ml

Ingredients

  • 1 tablespoon oil
  • 30g butter
  • 1 large onion,chopped
  • 100g leek, chopped
  • 200g cream cheese
  • 150g mozzarella, chopped
  • 100g parmesan, grated
  • 125g sour cream

Method

  1. Chop the leek and onion
  2. Brown the chopped leek and onion

    Add the butter and oil to a medium pan. When melted, add the leek and onion. Cook until browned, stirring occasionally

  3. Mix leek, onion, creams and cheeses in a bowl.

    Avoid pre-grated cheeses as they contain flours and don't melt as well. Mozarella is hard to grate, so slice thinly with a knife then roughly chop.

  4. Bake at 180C for 30mins

    It may expand slightly, so only fill to about 90%, and bake until it looks good. You can split this up into smaller batches and cook the rest later.
